Botanicals
Juniper
Juniper berry is known to impart a traditional piney gin note, although it can also appear as resinous, waxy, herbaceous, and even green and fresh. Jonston Gin owes its characteristic note to juniper berries, felt both in the nose and on the palate.

Coriander
Coriander seed play a key role in the gin world and is the second most used botanical ingredient. Coriander has a complex flavor, while at the same time citrusy, nutty, and slightly spicy. Typically, the taste of the coriander seeds is more pronounced at the end of the flavor journey.
Angelica
The angelica in Jonston Gin has an intense, earthy, and woody fragrance. It is the herbal tones that penetrate the nose, we can feel a bitter and herbal taste on the palate. Angelica perfectly harmonizes with aromatic juniper, creating a fundamental accord of the taste of our gin.
Licorice
The licorice root used in Jonston Gin is unique in flavor, similar to anise, but without menthol characteristics. The aroma is delicate, wood-like flavor. Licorice has the powerful ability to change the texture and mouthfeel of Gin.
Iris Root
Post-distillation, iris root is characterized by floral notes, while also carrying an earthy, dusty sweetness. The nose is dry, sweet, and clean, and the mouth is firm, sweet and woody. Like licorice, iris has cheek-filling properties and gives our gin depth and texture.
Cubeb berries
Considered an aphrodisiac for a reason - its taste is not obvious, on the one hand it is characterized by the spiciness of black pepper, on the other it shows delicate, floral, earthy notes, which give a beautiful complexity and depth to gin. Due to the high level of limonene it can give you a citrus feeling.
Cardamon
Originating in South India, this spice has a sharp and recognizable aroma. There is a spiciness on the nose, the taste is slightly perfumed - at first sweet, which later turns into a fiery aroma. Green cardamom seeds add eucalyptus flavor to the gin.
Lemon Peels
Jonston Gin gets its crisp aroma from the lemon peels which becomes palpable in the nose. The taste is tart but fresh. The refreshing lemon flavor is complemented by the heavier notes of juniper and earth.
